This sweet n spicy red chutney is a perfect accompniment for dipping with your favorite fried snacks and is perfect for topping chana chaats and pani puri. It is a perfect balance of sweet with a kick and the beautiful pop of red color is spectacular. This is a family recipe and one of the most delicious chutneys you will ever make. Originally made with fur (jaggery) i have substituted that with brown sugar for convenience. You can use it to a company fried snacks and use it on other savory snacks like chaat and bhel puri, etc. My favorite use for this chutney is in meethi puri or dahi puri, which is fried puffed semilna fritter filled with chickpeas and assorted chutneys.

Ingredients

  • 34 cup Brown sugar

  • 12 cup Tamarind pulp

  • 12 cup Water

  • tbsp Paprika

  • 12 tbsp Cayanne pepper

  • tbsp Roasted cumin n coriander powder

  • 12 tsp Ginger powder

  • 14 tsp salt

Directions

  • In a sauce pan combine all the ingredients and cook on a medium low flame for 15 to 20 minutes stirring occasionally.
  • Once the chutney is thick and the color is deep red, turn off the flame and let it cool.
  • Chutney will thicken further as it cools. Store in an air tight jar in the refrigerator for upto 3 months and in the freezer for 6 months.
  • Enjoy with your favorite snacks!
